Seriously – if this recipe were any easier or quicker it might be a sin to make. I’ve made it 3 times in the past 2 weeks and it always turns out beautifully. Amazing flavor, tender chicken, perfect carrots and potatoes. All you do is layer and set the crockpot around mid morning or noon and go about your day. Bella eats this by the pound.
- 4-5 Boneless Skinless Chicken Breasts
- 16 Ounce Bottle of Italian Dressing
- 3/4 Cup of Parmesan Cheese
- 3 tsp Italian Seasoning
- 4-6 Potatoes scrubbed and cut in wedges (you can peel if desired)
- 1 large bag of mini carrots
Pour enough Italian dressing to lightly cover bottom of crockpot. Place chicken breasts in, ideally all side by side. Add more Italian dressing on the chicken. Sprinkle half of cheese evenly onto the chicken. Sprinkle 1 tsp Italian seasoning evenly onto the chicken.
Pour carrots on top, add Italian dressing on top of chicken and carrots. Sprinkle 1 tsp Italian seasoning onto carrots. Place potatoes on top. Pour the remaining Italian dressing on the potatoes. Sprinkle 1 tsp Italian seasoning on the potatoes. Cook on low for 6-8 hours.
